To continue to push the limits of fermentation and explore flavors with the hope of creating bold new beers Jack's Abby started the largest barrel program in Massachusetts (currently over 1300 barrels).
A Mixed Fermentation Sour Ale brewed with wheat, rye and spelt aged in oak barrels. Complex aromas of wet hay, desert apple, oak, pineapple, underripe stone fruit and a hint of barnyard. More oak in the flavour lending a nice buttery note to the beer. Apple, hay and lemon notes compliment nicely. The lactic and acetic acids, along with the light tannins, remind of an oak aged chardonnay. Medium body, light carbonation and no noticeable bitter.
