As always, Joan Rubio's work is impeccable. Here, his Sumoll undergoes the ancestral treatment, but in contrast to other, more varying examples of this style, Joan demonstrates that true delicacy is entirely possible. While working at the renowned Cava house Recaredo, Joan honed his sparkling wine skills. His wines are always spotless and have a purity that makes it possible to experience the varietal beautifully. After the grapes slowly macerate for nine days, the wine undergoes the first fermentation in the bottle. Here it ferments dry and rests on the lees sediment for more than a year before being manually drained.
