Avalonia first takes shape with a thoughtful blend of barrel-aged farmhouse ales. That blend can span multiple beers (Freckled Fields, Pebble, Husk, etc.) and multiple years of stock aged in oak but is always prepared with the forthcoming fruit refermentation at top-of-mind. Last fall, as with many in recent memory, growing peches in New England proved challenging thanks to a late spring frost. Fortunately, our friends at Thrall Family Malt (Windsor, CT) were able to realize a small crop of white peaches and we were thrilled with their quality. With a much softer acidity than traditional yellow peaches, they are perfect complement for our beer and this batch arrived deliciously sweet with a delicate floral quality. Our dedicated team processed 1000lbs of peaches in-house and, as always, Avalonia underwent a complete refermentation on the fruit prior to packaging. It’s a standout stone fruit variation for sure with gentle acidity and a beautifully integrated fruit character.
